One year ago, the twelve of us who formed the steering committee of the Wooster Local Food Cooperative, Inc., held a public meeting at the Wayne County Public Library to share our ideas for a year-round local food market in downtown Wooster. Over the course of a very busy year, fraught with setbacks, mad rushes, hard work, and the occasional party,...
Strengthening the “weakest link” in the local meat infrastructure
Friend of the Ethicurean Sam Fromartz looks at a new wave of small slaughterhouses that are appearing in Virginia. He focuses on True & Essential Meats of Harrisonburg, a new partnership of former landscape architect Joe Cloud, his mother, and Joel Salatin (of Polyface Inc., who was profiled in Omnivore’s Dilemma ). True & Essential,...

The USDA looks at local food
Every now and then, newspapers print an article that makes it seem like locavores are running the U.S. food system, throwing our weight around, causing Big Ag to cower in corners. If only we had even a small fraction of that power…  In reality, the local food movement is  a tiny piece of the nation’s food economy — about 1 percent,...

Bringing everyone to the table: A review of “PolyCultures”
A handful of recent movies – most notably “Food, Inc.” and “Fresh” – have undoubtedly boosted the number of people with something to say about national food policy. And just as the local foods movement emphasizes supporting local farms and producers, filmmakers are beginning to take a closer look at the local...
Bottled water’s energy budget
In a short research paper, two staff members from the Pacific Institute examine how energy is used in the production and distribution of bottled water. Bottle production and transportation are by far the largest energy users, with pre-bottling water processing (filtration and disinfection), filling and sealing the bottles, and chilling the water...

When push comes to chèvre at Lucky Penny Creamery
Before Local Roots Market opened late last year, we expected gaps in the products offered. One specific category of products –- cheese –- kept us from limiting our definition of “local” to “within 100 miles” as we weren’t sure how many cheesemakers we would find in the area. Boy, were we wrong. Turns out that...

By Mat Rogers The 1979 children’s book Ox-Cart Man describes a colonial family who spends all year raising a crop and an ox, building the ox’s cart, and making mittens, brooms, and candles. Then the ox-cart man sets off to market to sell the crop and the mittens, brooms, and candles, then the ox, then the cart. He returns home carrying the...
Jewels at the Santa Monica Farmers Market
This week at the Santa Monica Farmers’ Market the jewels of the season glow. Among my favorites? The rainbow carrots in orange, ruby, purple and gold. Some roots were so young they were the tiniest of crooked fingers, delicate and naturally sweet. These carrots make wonderful crudities for hummus. Serve raw with: Roasted Red Pepper Hummus Jalapeño...

Cooking outside my comfort zone, pt. 1: A remembrance of squash blossoms past
In honor of Farmers Market Week next week, I vowed here to get out of my market rut and cook outside my comfort zone . That’s how I came to be picking up these beautiful squash blossoms on impulse at the Berkeley, Calif. Farmers market on Saturday. Squash blossoms, or fiori di zucca as they are called in Italy, are my madeleines. I first...

Summer fruits from the farmers market are the supermodels of the produce world. Just like Heidi Klum doesn’t need makeup to be beautiful , a super-fresh White Lady peach or Seascape strawberry doesn’t need extra sweetening or seasoning to shine. But given the right recipe—one designed expressly for fruit and vegetables at their peak...
