Butternut Squash Lasagna, Revisited

October 6th, 2009 admin

I love this time of year it puts me in the mood for butternut squash lasagna. Have you tried it yet? If you haven’t, you must. I’ve made this before and even posted about it, but this time I changed things up a bit by infusing fresh sage along with roasted garlic in the warm bechamal sauce, and I also added ricotta cheese between…

I’m sorry, but I just can’t get enough of butternut squash this season! I know I just previously posted a lasagna using it, but recently after flipping through a beautiful Donna Hay magazine I also got inspired to stuff it into shells. Donna used sweet potatoes in her recipe, which would be good as well, but I knew immediately I’d...

Individual " Lighter" Chicken Pot Pies
Individual " Lighter" Chicken Pot Pies
Winter just wouldn’t be complete if I didn’t make at least one pot pie, lately I tend to shy away from them because normally they’re not the most healthy thing to eat, but this version is not only portion controlled but the sauce is made from a rue whisked with chicken broth infused with garlic and fresh thyme, and yes, there’s...
Butternut And Acorn Squash Soup
Butternut And Acorn Squash Soup
Thank you all so much participating in the Macy’s giveaway! Through emails, I know that some of you held dinner parties this week to raise money to fight hunger. That makes me so happy! We held our own last night in a very impromptu sort of way when my mother-in-law dropped by with a standing rib roast, all ready to be devoured. I quickly...

Ricotta Dumplings in Broth
Ricotta Dumplings in Broth
It’s still winter out there, in fact as I write this I’m looking at snowflakes falling. To me, there’s nothing like a bowl of hot steamy soup to warm me up, and this one fits the bill. Not only is it quick to make, providing you have all the ingredients, but it’s also very healthy and light, there’s not one bit of...
Maple Roasted Acorn Squash and Cornbread Stuffing with Curried Apple & Cranberries
Maple roasted acorn squash and a gluten-free cornbread stuffing. We are moved in. Books are unpacked, paintings hung, bamboo platform bed assembled. I am dog tired and sore and deeply, deliriously happy to be here. It is a soft, foggy morning in Santa Monica, a Glenn Gould Goldberg Variations kind of morning. Five floors below our apartment window...
Warm Winter Salad with Roasted Banana Squash and New Potatoes
Roasted fingerling and tiny new potatoes and winter squash on baby salad greens. After a long and restless night I am pondering potato salad and glitter. Sleep deprivation may be unpleasant but it often breaks loose the inertia of stalled imagination (who among us has the power of will to maintain the status quo of the literal, linear world after...

Cooking outside my comfort zone, pt. 1: A remembrance of squash blossoms past
In honor of Farmers Market Week next week, I vowed here to get out of my market rut and cook outside my comfort zone . That’s how I came to be picking up these beautiful squash blossoms on impulse at the Berkeley, Calif. Farmers market on Saturday. Squash blossoms, or fiori di zucca as they are called in Italy, are my madeleines. I first...
Apple Wrapped Ricotta Tarts
Apple Wrapped Ricotta Tarts
The other day while I was photo grazing over at TasteSpotting , I came across Confessions of a Tart , she had just posted apple and ricotta tartlets. What caught my eye was that instead of a pastry crust, she used sliced apples. What a great idea! A dessert I don’t have to feel guilty about eating, and besides that, it just sounded so good...

Hands down, Apple’s app store wins by a mile. It’s a huge selection of all sorts of apps vs a rather sad selection of a handful for Zune. Microsoft has plans, especially in the realm of games, but I’m not sure I’d want to bet on the future if this aspect is important to you. The iPod is a much better choice in that case.
